Popular foodie Eloise Head (pictured) from London has shared her easy recipe for delicious mini Snickers cheesecakes

The mini cakes have a shortbread base with a Snickers cheesecake filling and are drizzled with melted chocolate, Snickers pieces, crushed peanuts and caramel sauce
For the base, the dessert guru first crushes 150g digestif biscuits in a food processor and then mixes the crumbs in a bowl with 60g melted butter.
She places muffin cases in a muffin tin and divides the base mixture into each by pressing down firmly.
Eloise whips 150ml cold double cream in a separate bowl until fluffy and ‘stiff peaks’.

Eloise begins by mixing finely shredded cookie crumbs with melted butter and placing a scoop of the base mixture into patty pans, pressing firmly. Then she whips up some double cream
In the third bowl, she adds cream cheese, powdered sugar, and clove caramel and beats with an electric whisk until combined.
Then the autodidact folds in the whipped cream until it is mixed, as well as a few pieces of Snickers.
Eloise places a generous scoop of the cheesecake mixture on each cookie sheet and pops the tray in the freezer for at least 30 minutes.

Eloise combines cream cheese, powdered sugar, and caramel, folds in the whipped cream and Snickers chunks, and scoops a scoop of the mixture onto her bases before freezing for 30 minutes
